Dried Loach is made from mud loach, a freshwater fish that lives hidden under the mud in rivers and canals. Following the water, the fish raises its head to find plankton or foam to eat.

Loach can be processed into many dishes such as: fried, grilled with ginger fish sauce, stir-fried with lemongrass and chili, hot pot, porridge, sour soup, braised with ginger leaves, turmeric leaves... Loach carrying eggs, cooked sweet with ginger leaves is a specialty of the western region, very fragrant, fatty and sweet.
